This could be done at any level and really for any topic. This project was used with Spanish II c.p. when studying clothing. Students were assigned teams of three and had to create a website where they would sell clothing using a wiki. I set up the wiki, invited them to join, and included specific instructions and a rubric all on the wiki (see links below). The project targeted vocabulary and specific grammar use in whole language. I spent all of five minutes showing them how to use a wiki, and most of them were fine. I would definitely do this again, and would like to find more ways to increase wiki use with my students.
